Yumminess to try!

I usually try to plan my menu's a week in advance. I'm trying to plan this coming week, and I figured I'd share my yummy finds (along with recipes) with everyone!
Disclaimer: I DID NOT make these recipes.....these are just what I've found on the web!

Crock Pot Bacon CheesePotatoes

 Ingredients
1/4 pound bacon, diced – I bake it first in the oven so that it is “done” and browned then I dice it and place in the crock pot.
2 medium onions, thinly sliced
4 medium potatoes, thinly sliced (or...
if you use a new potato or Yukon gold then halve)
1/2 pound cheddar cheese, thinly sliced (shredded is fine)
salt and pepper
butter
Green Onions (optional)
Instructions
Line crockpot with foil, leaving enough to cover the potatoes when finished – this will help to not stick and to steam the potatoes – also to keep them from getting discolored or mushy.
Layer half each of the bacon, onions and potatoes in the crockpot.
Season to taste with salt and pepper and dot with (real) butter.
Repeat layers of bacon, onions, potatoes and cheese. Dot with butter.
Cover with remaining foil.
Cover and cook on low for up to 6 hours (check at 4 hours – depending on your crock pot).
Add cheese for the last 20 – 30 minutes and enjoy!

Crockpot Ranch Pork Chops

Crockpot Ranch Pork chops:
package of boneless pork chops
1 can of Cream of Chicken soup
1 packet dry Ranch dressing mix

In crockpot layer pork chops, add the cream of chuicken soup, then sprinkle dry Ranch dressing all over.
... Cover and cook on high for 4 hours OR Low for 6 hours.

 Crispy Cheddar Chicken

2 lbs chicken tenders or 4 large chicken breasts
2 sleeves Ritz crackers
1/4 teaspoons salt
1/8 teaspoon pepper
1/2 cup whole milk
3 cups cheddar cheese, grated
1 teaspoon dried parsley

Sauce:
1 10 ounce can cream of chicken soup
2 tablespoon sour cream
2 tablespoon butter

Crush crackers. If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in.

Spray a 9×13 pan with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.

In a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.

What have we been up to?

We've been busy bee's since my last post.
Jeremy finished up 1st GrAdE, we took a trip to the GREAT WOLF LODGE, the kids went to the local Splash Pad, we've spent some time at our neighborhood pool, we celebrated America's birthday tWiCe--at our old hometown at the end of June & then in a neighboring town on Independence Day! Throw working 5 days a week in to the mix, and there's never a dull moment in our house! Enjoy a few pics of our days since the last post!!
